Zucchini Carpaccio

serves 4


2 fresh zucchini  stem end removed, each 6-8 inches long

virgin olive oil

fresh lemon


fresh ground pepper

1 small thinly sliced red onion

1 cup crumbled Feta cheese

2 TBL flat leaf parsley


You need a firm fresh zucchini for this dish which is lovely as a side or a salad.  

Shave the zucchini lengthwise on a mandolin or cut as thin as you can.  Press down on a vegetable peeler to get good ribbons as well.  Place shaved zucchini on a plate, drizzle with olive oil, fresh squeeze of lemon juice, salt and pepper.  Toss carefully.  The salad is best to be prepared just before serving.  should it sit too long, it will become soggy.  The salt and lemon will extract the moisture from zucchini.  

Break up the red onion shavings over the zucchini.  Sprinkle with Feta and chopped parsley.
