Place almonds in baking tray in 325 degree oven while assembling remaining ingredients.
Approximately 30 minutes
5-6 Cups raw whole almonds
1 1/2 TBL garlic powder
2 1/2 tsp smokey paprika
1 1/2 TBL dried basil
3/4 TBL cayenne
1 - 1 1/2 tsp salt (adjust to your preference)
3 egg whites
Remove almonds from oven after no more than 10 minutes. Mix all dry ingredients together and set aside. Whisk egg whites till frothy. Stir in almonds to evenly coat. Sprinkle spice mix across mixture and evenly coat. I like to use kitchen gloves to mix all together. Place almonds on a lightly sprayed tray in an even layer. Bake for 15 minutes, Stir and bake for an additional 15 minutes. The key is to make certain the nuts are dry. It is just fine to turn off oven crack open the door to allow the nuts to cool down in the oven. Store in a glass jar. This snack will stay fresh and crunchy for several weeks.
