Skillet Green Bean Casserole

Ingredients


  • 1 pound fresh green beans
  • 2 Cup Panko Bread Crumbs
  • 1/4 Cup Flat Leaf Parsley
  • 3 TBL Olive Oil
  • 1/2 teas chopped fresh garlic
  • 1/2 cup grated parmesan
  • 1/2 cup chopped onion
  • 4 oz. sliced mushrooms
  • 1 1/2 TBL flour
  • 1/2 cup Chicken Broth
  • 1/2 Cup Skim milk
  • 2 TBL Sherry
  • Salt & Pepper
  • Dash ground Nutmeg

Directions

Cook bean 3-4 minutes in boiling water - drain and set aside.

Combine crumbs, parsley, 1 TBL oil & 2 TBL cheese and set aside

Heat remaining oil in a cast iron skillet over medium heat.  Sauté onions and mushrooms, stir in flour, add milk, chicken broth and sherry.  Bring to a boil, add remaining ingredients, then stir in the beans.  Top with crumb mixture and bake or broil until heated through and golden on top.
