Savory Red Lentil & Brown Rice Stew

Really the only prep for this recipe is the assembly of the ingredients.

  • 1 diced yellow onion
  • 2 grated cloves of garlic (or more based on personal preference)
  • 3 TBL butter
  • 2 cups tomato sauce or crushed tomatoes
  • 1 cup red lentils
  • 1/2 cup brown rice
  • 1 1/2 TBL paprika
  • 1/4 teas crushed red peppers
  • 1/2 teas ground cumin
  • 2 cups organic or homemade chicken stock
  • 6 cups water
  • 2 teas kosher salt
  • Optional fresh mint or basil chopped as garnish before serving with a drizzle of Extra Virgin Olive Oil


Melt butter in a broad sauce pan over low heat. Add chopped onion allowing to simmer till tender.  Grate garlic into the pan.  Be careful not to allow the pan to become too hot to scorch the garlic.  Add all seasonings to brown slightly.  Next add all liquids, lentils and rice.

Cover and allow to simmer over medium low heat for 40 minutes.  Stirring occasionally.  


Serve immediately with a side salad or crusty bread for dipping.

This stew is hearty, full of flavor and satisfying.
