Really the only prep for this recipe is the assembly of the ingredients.
6 - 8 servings
Melt butter in a broad sauce pan over low heat. Add chopped onion allowing to simmer till tender. Grate garlic into the pan. Be careful not to allow the pan to become too hot to scorch the garlic. Add all seasonings to brown slightly. Next add all liquids, lentils and rice.
Cover and allow to simmer over medium low heat for 40 minutes. Stirring occasionally.
Serve immediately with a side salad or crusty bread for dipping.
This stew is hearty, full of flavor and satisfying.
