This is an incredibly fresh salad. Simple and clean flavor. Add blue cheese crumbles, dried cranberries and toasted walnuts for added flair. When I served this this first time at home, my husband, Chris, said, "This is the BEST salad I have had in a long time!" WE eat a great deal of vegetables in our house, but this little dish brings a spring flavor in the house even in the winter. Give it a try!
