Lowfat Crunchy Granola

3/4 Cup Organic Apple Juice

1/4 Cup raw honey

1 TBL Vanilla

1/4 C melted Coconut Oil

Juice of 1 orange  reserve 1 TBL zest

1/4 Cup Flaxseed Meal

1/2 Cup Sucanat or Brown Sugar - set aside to add with fruit

1/2 teas Salt

6 Cups whole thick cut Oats

1/2 Cup Raw Almonds sliced or coarse chopped

1/2 Cup Sunflower Seeds

1 -2 teas Cinnamon

1 Cup Dark Raisins

1/2 Cup chopped Apricots

1 Cup Dried Cranberries

1/2 Cup Chopped Prunes


Combine:  Coconut Oil, Orange Juice, Honey, Apple Juice, Salt and Vanilla.  Microwave until heated through

Combine: Oatmeal, Flaxseed Meal, Cinnamon and Nuts in mixing bowl.  Pour liquid mixture once heated.  Tossed until thoroughly mixed.

Combine: Dried fruit and brown sugar.  Set aside until granola is baked.

Spread granola on a baking sheet.

Place in oven at 300 degrees.  Stir every 20 minutes.  Bake until dry, approximately 1 hour. 

Remove from oven, sprinkle fruit/sugar mix on top, stir in.  Allow granola to completely cool before storing in glass containers.

Will remain fresh for several weeks.
