Honey Seeded Banana Bread

Pre-heat oven to 350 degrees

Cooking Time

Bake Muffins approximately 20 minutes Bake a loaf 50-60 minutes

Yields

1 Loaf or 12 Muffins

Ingredients

  • 1 1/2 Cup All-purpose flour or GF Flour of choice
  • 1 teas baking soda
  • 1/2 teas salt
  • 1 Cup mashed ripe bananas (2 large)
  • 1/3 Cup unsweetened applesauce
  • 2 large eggs (preferably¬†farm raised)
  • 1 TBL Flaxseed - organic
  • 1 TBL raw Cacao Nibs - organic
  • 3/4 Cup Honey
  • 1 TBL Peanut Butter - natural

Directions

Mix all wet ingredients together on low speed, add dry ingredients mixing on medium speed for 4 Minutes.  Scoop into paper lined muffin cups or baked in 9 x 5 loaf pan.

Notes

This bread freezes exceptionally well.

The texture will be light with a mild sweetness from the honey.
