Honey Pumpkin Pie Bites

Ingredients

  • 3 Eggs
  • 1 - 15 oz. pumpkin puree
  • 3/4 Cup honey
  • 1/2 Cup skim milk
  • 1/4 Cup cream
  • 2 teas Pumpkin Pie spice
  • 1/4 teas salt

Toasted Oat Pecan Crust:

  • 1 Cup rolled toasted oats
  • 1/3 Cup melted butter
  • 1/4 Cup honey
  • 1/2 Cup toasted chopped pecans


Directions

Using a muffin tin, line with paper liner then place 1 TBL of crust in bottom of liner.  Bake for 10 minutes in a 350 degree oven to toast crust.  Scoop filling into muffin cups, bake approximately 20 - 25 minutes.  Cool, serve with a dollop of whip cream or whipped coconut cream.  Sprinkle with Pumpkin Pie Spice.
