Healthy Turkey Pumpkin Chili

Ingredients

  • 1 1/2 pound ground chili (I prefer a mix of both white and dark meat)
  • 1 TBL coconut or olive oil
  • 1 medium chopped white onion
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, chopped
  • 1 (16 oz) canned pumpkin puree (can substitute fresh pumpkin puree use 2 -3 cups)
  • 2 cups salsa
  • 3 TBL cider vinegar
  • 4 cup tomato juice
  • 2 teaspoon ground cumin
  • 1 -1 1/2 teaspoon cayenne
  • 2 teaspoon paprika
  • 3/4 teaspoon ground cinnamon
  • garnish chop cilantro

Directions

  • Brown turkey in heated oil
  • Add remaining ingredients allow to simmer for 1 1/12 hours, stirring occasionally.

Notes

  • Serve chili with a fresh assorted greens salad

  • This version of chili is light and easy to digest.  Adjust seasonings to personal taste
