Guacamole Simple & Fresh

Purchase avocado a day or two ahead of using for them to appropriately ripen.  Unless you live in a region where ripe and ready to use avocados are available.  Then you are very fortunate :) !


  • 1 large ripe avocado
  • 1/4 cup finely diced onion - either red or white
  • 1 - 2 TBL diced jalapeno
  • 1 TBL diced cilantro
  • 1/2 TBL Greek yogurt
  • squeeze of fresh lemon wedge
  • 1/3 cup diced tomatoes
  • dash red hot sauce (optional)
  • salt & pepper to taste


Scrape and then mash avocado pulp in mixing bowl.


  • yogurt
  • all diced ingredients except for tomatoes
  • seasonings
  • mix until just incorporated leaving the mixture a bit chunky or mix longer for a smoother texture
  • add tomatoes

Either serve immediately.  Or place a layer of plastic film directly on top of mixture and refrigerate.
