Feta Cheese Crumbles
Salt & Pepper
Additional ingredients depending on individual preference:
Sweet or Red Onion
Kalamata Olive - sliced
Fresh Herbs: Basil, Mint or Parsley
Shave zucchini into thin ribbons - using a vegetable peeler or sliced carefully with a Chef's knife
Layer the ribbons on a serving platter, squeeze fresh lemon juice on zucchini, lightly drizzle olive oil, sprinkle with coarse salt and freshly ground pepper. Top with Feta cheese crumbles.
The presentation of this salad can be much fun. Play around with how you may lay out the zucchini - flat, curly or spiral. The key is to have fun with it. Then add the other ingredients. Depending on the meal the salad is being served with, experiment from the additional ingredient list to add more flavors, texture and color.
