Almond Shortbread Cookie

Allow butter to be at room temperature

Ingredients

  • 1 Cup Almond Flour
  • 1/3 Cup powdered sugar
  • 3 Tablespoons unsalted Butter, room temperature
  • 1 teaspoon pure Vanilla
  • dash of kosher salt

Directions

Cream ingredients together until the texture of play dough :)  Dough will remain slightly beige in color due to nut flour.

Scoop by rounded teaspoon, roll lightly in the palm of hand.  Lay on baking tray lined with parchment.  Using a fork press ball crisscrossed to flatten.

Bake at 350 degrees for 10 minutes.  Rotate pan and continue baking for 5-8 additional minutes.  Final baking time will depend on individual oven. 

Notes

Cookies are done when a golden hue is present across the cookie. 

Should you prefer a softer cookie reduce baking time.  Should you prefer a hard crisper cookie back an additional 2 minutes.

From my experience as a bakery owner, shortbreads are best when there is a light crumb texture throughout the mouthful.
